Manuka honey MGO grades: a technical guide for manufacturers

Methylglyoxal (MGO) is the molecule that makes Manuka honey commercially distinct. For NPD teams scoping a new product, the practical question is rarely 'what is MGO' — it is 'which grade do I actually need, and how will it behave in my formulation?' This guide walks the spectrum from MGO 100+ to MGO 800+ for industrial and cosmetic use.

Where MGO comes from

MGO forms in Leptospermum scoparium nectar via the non-enzymatic conversion of dihydroxyacetone (DHA). DHA levels are highest in fresh harvest; MGO continues to develop in the drum for 12–24 months at warehouse temperatures. This means a 'young' MGO 250+ honey will often mature toward MGO 350+ during storage — relevant to anyone holding stock for blending.

MGO 100+ to 250+ — flavour-led applications

At this band Manuka delivers the characteristic earthy, mineral flavour without commanding premium-grade pricing. Suitable for blended retail jars, foodservice squeeze bottles, lozenges, syrups and any application where the Manuka claim is dietary rather than functional. Bioactivity is modest and not appropriate for wound-care claims.

MGO 263+ to 514+ — the everyday functional band

This is the heart of the wellness market: equivalent to UMF 10+ through UMF 15+. Confirmed in-vitro activity against Staphylococcus aureus (including MRSA) and Pseudomonas aeruginosa at these levels. Used in throat sprays, oral-care gels, immune-support lozenges, and skincare actives. Stable in cool-process cosmetic formulations; avoid prolonged exposure above 40 °C, which accelerates HMF formation and degrades activity.

MGO 550+ to 829+ — medical and clinical-grade input

UMF 16+ to UMF 20+ equivalence. This is the band that feeds licensed wound-care products, contract-manufactured medical devices, and high-end actives. Always specified with full partner-lab CoA, gamma-irradiation for sterility, and producer traceability under NDA. Formulators should specify both MGO floor and DHA residual — DHA can continue converting in finished product if levels remain high.

MGO 850+ and above — specialist supply

Limited harvest availability; pricing tracks NZ producer auctions. Typically reserved for clinical trial material, premium licensed wound dressings, and high-fee cosmetic dossier ingredients. Lead times extend; expect 6–10 weeks for documented batches at this grade.

MGO behaviour in formulation

MGO is heat-sensitive above 50 °C and reactive with free amino acids — so blending Manuka into protein-rich matrices (whey, collagen) will progressively quench activity. For best retention, add Manuka post-pasteurisation, keep pH near 4, and avoid extended hold times in heated mix tanks. Activity loss during a typical cold-fill cosmetic process is negligible; loss during hot-fill confectionery can exceed 30%.
